What I’ve learned from Facebook lately..

You Must See These – Its time to be disgusted

ShareTweet You’ve heard about how you should see Food, Inc.  And you should.  You should also add SuperSize Me to that list of Must See’s.  But I just finished watching King Corn and if you have Netflix, you should go watch it now.  I’m amazed.  I’m not sure any food is all that great for us anymore. We are killing ourselves one sip and bite at a time and only we can do something about this. I stopped eating fast food a long time ago.  I’m an avid food label reader.  I live with others who demand foods i would never buy.. but they are in my refrigerator. Sangaree BiLo Gets a FaceLift

ShareTweet We’ve often referred to “my BiLo” in a semi-negative way. Its just wasn’t up to the fashions of Moncks Corner or Hanahan and it was depressing. This is the only neighborhood grocery store that survived when our Wally World went Super. I’m proud to announce (and they aren’t giving me a thing to say this) that they are having a Grand Opening on May 4, 2011. The store is beautiful. New floors, new produce department, new machines. I’m so very impressed. Oh and they got a facelift on the outside, too. Now “My BiLo” isn’t a dreadful thing to say. 12 Days of Pumpkin ~ Better than Pumpkin Pie Cake

ShareTweet Crust: 1 box Duncan Hines (don’t read the label ;) ) Yellow Cake Mix (set one cup aside) 1/2 cup (one stick) butter, softened 1 egg Mix and press into greased 9 x 13 pan. Custard: 1 – 29 ounce or 2 – 15 oz cans pumpkin puree 3 eggs 5 ounces evaporated milk 1/4 cup brown sugar (packed) 1/4 cup sugar 1 1/2 teaspoons ground cinnamon 1/4 teaspoon ground nutmeg Mix together and pour over crust. Topping: Extra one cup Cake Mix 1/2 cup sugar 1/2 cup (one stick) butter, softened 1/2 cup chopped pecans (optional) Mix and drop, by teaspoonful, over the top. ShareTweet When Girlie made Pumpkin Bread, the other day, we only had a large can of canned pumpkin. When I saw the left-over pumpkin, in the fridge, this morning, I knew I needed to use it up. I wanted to adapt the pumpkin bread recipe to accommodate yogurt. I had been making my educated guesses, on the bottom of the recipe. I knew I wanted to substitute some of the fat with Fage Greek Yogurt. I didn’t quite have 16 ounces of pumpkin, though. I managed to add apple sauce, for the missing pumpkin, and the yogurt for some of the fat. I’m not really replacing fat because the yogurt is full fat. Coming home from North Carolina, I saw “Ikea Blvd” and it was all over

ShareTweet Ikea.  I know I have a picture in my phone.  I so heart Ikea.  I had a mission. I needed a cutting board and I did want to see all the cutting boards that they had.. which took some juggling.  They are in two different departments. I found my treasured wooden cutting board, to go with my “almost killed us” Kohl’s knifes. I even found the oil to maintain it.  And a sharpening ceramic thingamagic. We also found a cheap pan for crepes, like Alton Brown described, and some tiny clear dishes for herbs in upcoming recipe photos, when I can cook again. I’ve been having a real hard time with the Spring Roll Wrappers, so I’ve switched to Egg Roll Wrappers, purchased in the produce department, at the supermarket. ShareTweet Okay. Confession. I’m an egg snob. I prefer “free-range” brown eggs, in paper cartons. It all started as a taste experiment. I choose to be ignorant to the humane aspects of the treatment of chickens. This post is not about the chicken. I’d have my own chickens, if that were possible. Right now, its not. My choice of free-range eggs is much like my switch to hormone-free (not ultra pasteurized) milk. Purely a taste choice. Here’s a great break-down. I’ve never seen this side-by-side, before, and yet I felt this way about the poor commercial white eggs. We like free-range brown eggs more. We think they taste better. ShareTweet I can’t eat the “canned sloppy joe stuff.”  Besides disliking the taste, there are too many ingredients that give me a headache, in it. The best use of Sloppy Joe’s, I’ve ever experienced, was potluck style, at a HomeSchool Association camp-out.  After setting up camp, its dark and everyone is tired.  The meat was kept warm in crock pots and we just put out a bunch of accompaniments.  Its always a go-to potluck meal. When I was in the midwest, it was served to accommodate out-of-town relatives, that were arriving at alternating times.  They called it “BBQ.” No matter what you call it, this recipe is a winner.  We added granulated garlic, and didn’t add the Montreal seasoning, but next time I’ll try it with Toronto Seasoning (Whole Foods version of Montreal Seasoning.) Whole Wheat Ranch Bread

ShareTweet While I was researching dough conditioners, I fished around on the Mormon Foodie’s Bread Maker Blog and found some inspiration to use my Ranch Dressing Mix, with my Whole Wheat Bread and new Dough Conditioner. I get brave, like that. Sometimes. :) (I, successfully, have substituted 1/2 the flour in my corn bread recipe, for tamale pie, with 100% White Wheat Flour. I, also, used Pinto Beans and Black Beans, in it, to make it more colorful. So, feel free to experiment with beans. Yay me.) So, anyway.. where was I? Oh, yes!
